SIM cards are universal - in the sense that they are all the same size and all do the same thing. The main issue is the 'permissions' which the phone company grants on that SIM card and the price plan associated with it.

Yes - a new SIM card will have a new phone number. You will be told this number when you buy the card. Whichever way you dial will not make any difference to the cost. Note that stored numbers in the format etc will not work. The number should be with the SIM card. If you forget it find someone with a mobile and ask if you can call their phone, your number will come up on the display One other thing you may not be aware of coming from the US, incoming calls are free, eg if someone calls you, there is no charge to you.
This includes incoming international calls. Obviously there is a charge to them! You will be roamed to a UK netowkr while here, so you dial as though you had a UK phone. That means a UK number is dialled as xxx xxx etc without the , and a US number is dialled with a Of course, it is perfectly safe to put the and country code in front of any number and will not affect the call cost.

The phone number is not stored in the SIM or the phone and so there is no universal way of finding it from the handset. Your SIM may come with instructions as to how to obtain it indeed it will likely be printed on the SIM pack , but otherwise simplydial a phone that has caller ID - the call does not even have to be answered to reveal the number. As for costs it depends on how much you use it!
One option is to register your debit card with the network so that you can add credit simply by calling the free phone top up line. Note that ALL UK operators require you to register a card to do this because of a long standing payment card fraud. Sorry, this is simply incorrect, plain wrong! A US number is dialled as number, not ! If you dial from a phone with a UK SIM in it, you will get a 'number unabtainable' dialtone or message. This will work on all GSM networks it being Global Standard and will also route all local numbers correctly e. Does your boyfriend need to access emails etc.
If so, I would keep the sim in that Blackberry and buy yourself a "cheap as chips" "pay as you go" mobile phone. Then email from his Blackberry to tell all your friends your new number. If for some reason, you do get separated, this way means you can contact each other in an emergency. As for topping up your mobile phone, a lot of newsagents and grocery stores sell "top-up cards" and you can also top up from many UK cashpoint machines using your debit card this is a good illustration of what to do.
